Ingredients

  • 1 lb chicken breast, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups cooked rice
  • 1 cup pineapple chunks
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1/2 tsp ginger, ground
  • 1/4 tsp garlic powder

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion and bell peppers and cook until softened.
  4. Stir in rice, pineapple, soy sauce, honey, ginger, and garlic powder.
  5. Heat through, stirring occasionally.
