Quick and simple pineapple chicken rice recipe.

- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cups cooked rice
- 1 cup pineapple chunks
- 1/4 cup soy sauce
- 1 tbsp honey
- 1/2 tsp ginger, ground
- 1/4 tsp garlic powder
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned.
- Add onion and bell peppers and cook until softened.
- Stir in rice, pineapple, soy sauce, honey, ginger, and garlic powder.
- Heat through, stirring occasionally.
- Serve hot.

- Adjust honey and soy sauce to your preference.
