Description
Quick and easy pineapple chicken and rice cooked on a Blackstone griddle.
Ingredients

- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- 1 cup chopped pineapple
- 1 cup cooked rice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tbsp cornstarch
- 1/4 cup water
- 1/2 tsp garlic powder
- 1/4 tsp ginger
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce, brown sugar, cornstarch, water, garlic powder, and ginger.
- Preheat Blackstone griddle to medium heat. Add olive oil.
- Add chicken and cook until browned and cooked through.
- Add pineapple and rice to the griddle.
- Pour sauce over chicken, pineapple, and rice.
- Cook until sauce thickens, stirring occasionally.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- Adjust sweetness by adding more or less brown sugar.
- Serve over white rice.
