Description

Quick and easy pineapple chicken and rice cooked on a Blackstone griddle.


Ingredients

Scale
  • 1 lb chicken breast, cubed
  • 1 tbsp olive oil
  • 1 cup chopped pineapple
  • 1 cup cooked rice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1/2 tsp garlic powder
  • 1/4 tsp ginger
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix soy sauce, brown sugar, cornstarch, water, garlic powder, and ginger.
  2. Preheat Blackstone griddle to medium heat. Add olive oil.
  3. Add chicken and cook until browned and cooked through.
  4. Add pineapple and rice to the griddle.
  5. Pour sauce over chicken, pineapple, and rice.
  6. Cook until sauce thickens, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Serve immediately.

Notes

  • Adjust sweetness by adding more or less brown sugar.
  • Serve over white rice.
