- 1/2 cup hot brewed coffee
- 1 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 2 tablespoons milk

- 1/4 cup mini chocolate chips
- Crushed candy canes for garnish
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, vanilla extract, and peppermint extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Carefully stir in the hot coffee. The batter will be thin.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely.
- While the cupcakes cool, prepare the frosting. In a medium bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, alternating with the milk, beating until smooth and fluffy.
- Stir in the peppermint extract.
- Gently fold in the mini chocolate chips.
- Once the cupcakes are completely cool, frost them generously.
- Garnish with crushed candy canes.
Notes
- For a stronger coffee flavor, use espresso instead of regular coffee.
- Ensure your butter is truly softened for the creamiest frosting.
