Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • 1/2 teaspoon peppermint extract (for frosting)
  • Crushed peppermint candies, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in peppermint extract.
  4. Gradually add flour and salt, mixing until just combined.
  5. Roll dough into small balls and place on ungreased baking sheets.
  6. Bake for 8-10 minutes, or until edges are lightly golden.
  7. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  8. For the frosting, in a large bowl, cream together butter and powdered sugar until smooth.
  9. Beat in milk and peppermint extract until light and fluffy.
  10. Frost cooled cookies and garnish with crushed peppermint candies.

Notes

  • For a stronger peppermint flavor, add more peppermint extract to both the cookies and frosting.
