Quick and flavorful shrimp and orzo pasta dish.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.
- Add shrimp to the skillet and cook until pink and opaque. Remove shrimp from skillet and set aside.
- Add orzo to the skillet and toast for 1 minute.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is cooked and liquid is absorbed.
- Stir in Parmesan cheese and parsley. Season with salt and pepper.
- Add shrimp back to the skillet and heat through.
- Serve immediately.
Notes
- Add a squeeze of lemon juice for extra flavor.
- Use vegetable broth instead of chicken broth for a vegetarian option.
