Parmesan Orzo with Shrimp

Description

Quick and flavorful shrimp and orzo pasta dish.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.
  2. Add shrimp to the skillet and cook until pink and opaque. Remove shrimp from skillet and set aside.
  3. Add orzo to the skillet and toast for 1 minute.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is cooked and liquid is absorbed.
  5. Stir in Parmesan cheese and parsley. Season with salt and pepper.
  6. Add shrimp back to the skillet and heat through.
  7. Serve immediately.

Notes

  • Add a squeeze of lemon juice for extra flavor.
  • Use vegetable broth instead of chicken broth for a vegetarian option.
