Description

Simple one-pot chicken orzo recipe.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup chopped vegetables (such as broccoli, carrots, or peas)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
  2. Add onion and garlic to the pot and cook until softened.
  3. Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until orzo is cooked.
  4. Stir in vegetables and Parmesan cheese. Season with salt and pepper to taste.
  5. Serve immediately.
