One-Pan Honey Butter Garlic Chicken and Rice

Description

Simple one-pan chicken and rice dish with honey butter garlic flavor.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 tablespoons honey
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat.
  3. Season chicken thighs with salt and pepper. Sear chicken in the skillet until browned on both sides. Remove chicken and set aside.
  4. Add rice to the skillet and cook for 1 minute, stirring constantly.
  5. Pour in chicken broth, honey, butter, and garlic. Stir to combine.
  6. Place chicken thighs on top of the rice mixture.
  7. Cover the skillet and bake in the preheated oven for 25-30 minutes, or until rice is cooked and chicken is done.
  8. Let stand for 5 minutes before serving. Garnish with parsley, if desired.

Notes

  • For extra flavor, add vegetables like broccoli or carrots to the skillet along with the rice.
