A baked oatmeal dish with apples and carrots.
Ingredients

- 3 cups rolled oats
- 1 cup grated carrots
- 1 cup chopped apples
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 3 cups milk
- 1/4 cup maple syrup
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine oats, carrots, apples, walnuts, raisins, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together milk, maple syrup, melted butter, and vanilla extract.
- Pour wet ingredients over dry ingredients and stir to combine.
- Pour mixture into a greased 9×13 inch baking dish.
- Bake for 30-35 minutes, or until golden brown and set.
- Let cool slightly before serving.
Notes
- Add a dollop of yogurt or a drizzle of maple syrup before serving.
