Savory miso glazed eggplant.
Ingredients

- 1 large eggplant, sliced
- 2 tablespoons vegetable oil
- 3 tablespoons miso paste
- 2 tablespoons mirin
- 1 tablespoon sugar
- 1 tablespoon sake
- 1 teaspoon soy sauce
- 1 tablespoon sesame seeds, for garnish
Instructions
- Slice the eggplant into 1/2-inch thick rounds.
- Heat vegetable oil in a large skillet over medium heat.
- Add eggplant slices and cook for 5-7 minutes per side, until softened and golden brown.
- In a small bowl, whisk together miso paste, mirin, sugar, sake, and soy sauce.
- Pour the miso glaze over the eggplant in the skillet.
- Cook for 2-3 minutes, until the glaze thickens and coats the eggplant.
- Garnish with sesame seeds and serve hot.
Notes
- Serve over rice or as a side dish.
- Adjust sweetness by adding more or less sugar to the glaze.
