Ingredients

- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup tomato sauce
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine rice, chicken broth, tomato sauce, onion, garlic, chili powder, cumin, salt, and pepper in a slow cooker.
- Stir well to combine.
- Cover and cook on low for 2-3 hours, or until rice is tender and liquid is absorbed.
- Fluff with a fork before serving.
Notes
- For a spicier flavor, add a pinch of cayenne pepper.
- Garnish with chopped cilantro and a squeeze of lime juice before serving.
