Ingredients

  • 1 cup long-grain rice
  • 4 cups water
  • 1 cinnamon stick
  • 1 can (12 ounces) evaporated milk
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins (optional)
  • Ground cinnamon for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice, water, and cinnamon stick. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
  3. Remove the cinnamon stick. Stir in the evaporated milk, sweetened condensed milk, and vanilla extract.
  4. Bring the mixture to a simmer over medium heat, stirring constantly to prevent sticking.
  5. Stir in the raisins, if using. Continue to simmer for 10-15 minutes, or until the pudding has thickened to your desired consistency.
  6. Remove from heat and let cool slightly.
  7. Serve warm or chilled, garnished with ground cinnamon.
