- 1 cup long-grain rice
- 4 cups milk
- 1 cinnamon stick
- 1/2 cup sugar
- 1/4 cup raisins
- 1 teaspoon vanilla extract
Instructions
- Rinse the rice in a fine-mesh sieve until the water runs clear.
- In a saucepan, combine the rice, milk, and cinnamon stick.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until the rice is tender.
- Stir in the sugar, raisins, and vanilla extract.
- Cook for another 10 minutes, stirring occasionally, until the pudding has thickened.
- Remove from heat and let cool slightly.
- Serve warm or chilled.
Notes
- For a richer pudding, use whole milk or add a splash of cream.
- You can add other spices, such as nutmeg or cardamom, to taste.
- Garnish with a sprinkle of cinnamon or chopped nuts before serving.
