Description

Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In the rice cooker, heat the vegetable oil. Add the chopped onion and minced garlic and cook until softened.
  3. Add the rinsed rice and cook for about 2 minutes, stirring constantly.
  4. Pour in the chicken broth and tomato sauce. Stir in chili powder, cumin, salt, and pepper.
  5. Close the rice cooker and cook according to the manufacturer’s instructions for white rice.
  6. Once the rice is cooked, let it sit for 10 minutes before fluffing with a fork.
  7. Serve hot as a side dish.
