Ingredients

- 1 cup rice
- 2 cups water
- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can black beans, drained
- 1 can corn, drained
- 1 packet taco seasoning
- 1 avocado, diced
- 1/2 cup sour cream
- 1/4 cup salsa
Instructions
- Cook rice according to package directions.
- Brown ground beef in a skillet. Drain excess grease.
- Add onion and bell pepper to the skillet and cook until softened.
- Stir in black beans, corn, and taco seasoning.
- Simmer for 5 minutes.
- Assemble bowls with rice, beef mixture, avocado, sour cream, and salsa.
