- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) diced tomatoes, undrained
- 1 packet taco seasoning
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, cilantro
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned.
- Add onion, garlic, and bell pepper to the skillet and cook until softened.
- Stir in rice, chicken broth, black beans, diced tomatoes, and taco seasoning. Season with salt and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve with your favorite toppings.
Notes
- Adjust taco seasoning to your preference.
- For a spicier dish, add a pinch of cayenne pepper.
- You can substitute ground turkey or beef for chicken.
