Description

Chicken breasts baked with Mexican spices and topped with a creamy cheese sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Rub the mixture over the chicken breasts.
  4. Place chicken in a baking dish and bake for 20-25 minutes, or until cooked through.
  5. While chicken is baking, prepare the cheese sauce. In a saucepan, combine cheddar cheese, sour cream, and milk. Heat over low heat, stirring until cheese is melted and sauce is smooth.
  6. Pour cheese sauce over the baked chicken.
  7. Garnish with chopped cilantro and serve.

Notes

  • Add a pinch of cayenne pepper to the spice mixture for extra heat.
  • Serve with rice and beans for a complete meal.
