- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons chopped cilantro
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Rub the mixture over the chicken breasts.
- Place chicken in a baking dish and bake for 20-25 minutes, or until cooked through.
- While chicken is baking, prepare the cheese sauce. In a saucepan, combine cheddar cheese, sour cream, and milk. Heat over low heat, stirring until cheese is melted and sauce is smooth.
- Pour cheese sauce over the baked chicken.
- Garnish with chopped cilantro and serve.
Notes
- Add a pinch of cayenne pepper to the spice mixture for extra heat.
- Serve with rice and beans for a complete meal.
