Ingredients

  • 1 zucchini, diced
  • 1/2 red onion, thinly sliced
  • 1 lime, juiced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup Mexican crema or sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tostada shells

Instructions

  1. Heat olive oil in a skillet over medium heat. Add zucchini and red onion; cook until softened, about 5-7 minutes.
  2. Stir in chili powder, cumin, salt, and pepper.
  3. Combine shredded chicken, zucchini mixture, lime juice, avocado, and cilantro in a bowl. Mix well.
  4. Spread Mexican crema on tostada shells.
  5. Top with chicken mixture.
  6. Serve immediately.
