A hearty casserole with chicken, rice, cheese, and Mexican flavors.
Ingredients

- 2 cups cooked chicken, shredded
- 2 cups cooked rice
- 1 can (10.75 ounces) condensed cream of chicken soup
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped onion
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, rice, soup, tomatoes and green chilies, cheese, sour cream, onion, chili powder, and cumin.
- Pour mixture into a greased 9×13 inch baking dish.
- Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
- Let stand for 5 minutes before serving.
Notes
- Add a layer of crushed tortilla chips on top before baking for extra crunch.
- Use rotisserie chicken for convenience.
- Adjust chili powder to your preferred spice level.
