A hearty and flavorful dish combining chicken, black beans, and rice with Mexican spices.
Ingredients

- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup rice
- 2 cups chicken broth
- 1 can (10 oz) diced tomatoes and green chilies
- 1 packet taco seasoning
- Optional toppings: shredded cheese, sour cream, avocado
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned.
- Add onion, garlic, and bell pepper to the skillet and cook until softened.
- Stir in black beans, rice, chicken broth, diced tomatoes and green chilies, and taco seasoning.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
- Serve with your favorite toppings.
Notes
- Adjust taco seasoning to your preferred spice level.
- For a creamier dish, stir in a dollop of sour cream before serving.
