Description
Chicken simmered in a flavorful adobo sauce with Mexican spices.
Ingredients

- 2 lbs chicken pieces
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tbsp adobo sauce
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown chicken pieces on all sides. Remove chicken from pot and set aside.
- Add onion, garlic, and bell pepper to the pot and cook until softened.
- Stir in diced tomatoes, adobo sauce, chili powder, cumin, and oregano.
- Return chicken to the pot. Season with salt and pepper.
- Bring to a simmer, then reduce heat and cover.
- Cook for 30-40 minutes, or until chicken is cooked through.
- Serve hot with your choice of sides.

- Serve with rice, beans, or tortillas.
