Description

Chicken simmered in a flavorful adobo sauce with Mexican spices.


Ingredients

Scale
  • 2 lbs chicken pieces
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tbsp adobo sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown chicken pieces on all sides. Remove chicken from pot and set aside.
  3. Add onion, garlic, and bell pepper to the pot and cook until softened.
  4. Stir in diced tomatoes, adobo sauce, chili powder, cumin, and oregano.
  5. Return chicken to the pot. Season with salt and pepper.
  6. Bring to a simmer, then reduce heat and cover.
  7. Cook for 30-40 minutes, or until chicken is cooked through.
  8. Serve hot with your choice of sides.
