Mediterranean Chicken Zucchini Bake

Description

Chicken and zucchini bake with Mediterranean flavors.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1/2 red onion, sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 4 oz feta cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, toss chicken, zucchini, red bell pepper, red onion, Kalamata olives, garlic, olive oil, oregano, salt, and pepper.
  3. Spread mixture in a 9×13 inch baking dish.
  4. Bake for 30-35 minutes, or until chicken is cooked through and vegetables are tender.
  5. Sprinkle feta cheese over the top and bake for another 5 minutes, or until cheese is slightly melted.
  6. Let stand for 5 minutes before serving.

Notes

  • You can add other vegetables, such as cherry tomatoes or eggplant.
  • Serve over rice or quinoa.
