Description
Chicken and zucchini bake with Mediterranean flavors.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 medium zucchini, sliced
- 1 red bell pepper, chopped
- 1/2 red onion, sliced
- 1/4 cup Kalamata olives, pitted and halved
- 4 oz feta cheese, crumbled
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F.
- In a large bowl, toss chicken, zucchini, red bell pepper, red onion, Kalamata olives, garlic, olive oil, oregano, salt, and pepper.
- Spread mixture in a 9×13 inch baking dish.
- Bake for 30-35 minutes, or until chicken is cooked through and vegetables are tender.
- Sprinkle feta cheese over the top and bake for another 5 minutes, or until cheese is slightly melted.
- Let stand for 5 minutes before serving.
Notes
- You can add other vegetables, such as cherry tomatoes or eggplant.
- Serve over rice or quinoa.
