- 1 1/2 cups chocolate cookie crumbs
- 5 tablespoons melted butter
- 16 ounces low-fat cottage cheese
- 8 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat oven to 350°F (175°C).
- Combine cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cottage cheese and cream cheese until smooth.
- Add sugar, cocoa powder, and vanilla extract. Mix well.
- Beat in eggs one at a time.
- Pour batter over crust.
- Bake for 50-55 minutes, or until the center is almost set.
- Let cool completely before refrigerating for at least 4 hours.

- For a smoother texture, blend the cottage cheese before mixing.
- Garnish with chocolate shavings or fresh berries before serving.
