Description

A hearty and flavorful lentil curry.


Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils.
  2. In a pot, sauté onion, garlic, and ginger until softened.
  3. Add turmeric, cumin, coriander, and chili powder. Cook for 1 minute.
  4. Stir in diced tomatoes, lentils, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  6. Season with salt and pepper.
  7. Garnish with fresh cilantro before serving.
