Ingredients

- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon chili powder
- 1 can (14 ounces) diced tomatoes
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils.
- In a pot, sauté onion, garlic, and ginger until softened.
- Add turmeric, cumin, coriander, and chili powder. Cook for 1 minute.
- Stir in diced tomatoes, lentils, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the amount of chili powder to your preferred spice level.
- Serve with rice or naan bread.
