  • 1 whole chicken (about 45 lbs)
  • 2 lemons – Zested and juiced
  • 4 cloves garlic – Minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary – Chopped
  • 2 tablespoons fresh thyme – Chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 onion – Quartered
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove giblets from the chicken, rinse under cold water, and pat dry.
  3. In a small bowl, combine lemon zest, lemon juice, minced garlic, olive oil, rosemary, thyme, salt, and black pepper to create the herb mixture.
  4. Rub the herb mixture all over the chicken, including under the skin, and stuff the cavity with quartered onion.
  5. Pour chicken broth into the bottom of the roasting pan.
  6. Place the marinated chicken in the oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
