- 2 lemons – Zested and juiced
- 4 cloves garlic – Minced
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary – Chopped
- 2 tablespoons fresh thyme – Chopped
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 onion – Quartered
- 1 cup chicken broth
- Preheat the oven to 375°F (190°C).
- Remove giblets from the chicken, rinse under cold water, and pat dry.
