Description

A comforting and flavorful soup with chicken, rice, lemon, ginger, and turmeric.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground turmeric
  • 8 cups chicken broth
  • 1/2 cup long-grain rice
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  3. Stir in garlic, ginger, and turmeric and cook for 1 minute more.
  4. Pour in chicken broth and bring to a boil. Add rice, reduce heat, and simmer for 15 minutes, or until rice is cooked.
  5. Stir in lemon juice and season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.

  • For a richer flavor, use homemade chicken broth.
  • Add other vegetables, such as spinach or kale, for extra nutrients.
