Ingredients

- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup lemon curd
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 8-10 minutes, or until edges are lightly golden.
- Remove from oven and let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Once cool, make a small indentation in the center of each cookie and fill with lemon curd.
