- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup lemon juice
- 2 tablespoons lemon zest
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together butter and 1/2 cup sugar until light and fluffy.
- Gradually add 2 cups flour and 1/4 teaspoon salt, mixing until a crumbly dough forms.
- Press half of the dough into the bottom of an ungreased 9×13 inch baking pan.
- In another bowl, beat together eggs, 1 1/2 cups sugar, 1/4 cup flour, baking powder, and 1/4 teaspoon salt.
- Stir in lemon juice and lemon zest.
- Pour lemon mixture over the crust.
- Crumble remaining dough over the lemon filling.
- Bake for 25-30 minutes, or until golden brown.
- Let cool completely before cutting into bars.
Notes
- For a tangier flavor, add more lemon juice.
- Store in an airtight container at room temperature.
