Description
Light and refreshing pasta salad with lemon dressing.
Ingredients

- 1 pound capellini pasta
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook capellini according to package directions. Drain and rinse with cold water.
- In a large bowl, whisk together olive oil, lemon juice, and garlic.
- Add cooked capellini, Parmesan cheese, and parsley to the bowl. Toss to combine.
- Season with salt and pepper.
- Serve immediately or chill for later.

- Add grilled chicken or shrimp for a heartier meal.
- Use other fresh herbs, such as basil or oregano.
