Description

This lemon blueberry bread combines fresh blueberries with a lemon zest for a sweet and tangy flavor.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup buttermilk
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together sugar and butter. Beat in egg, then stir in buttermilk, lemon juice, and lemon zest.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Gently fold in blueberries.
  6. Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense lemon flavor, add an extra teaspoon of lemon zest.
  • If using frozen blueberries, do not thaw them before adding to the batter.
