- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 8 oz mushrooms, sliced
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 oz cream cheese, cubed
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides.
- Add mushrooms and garlic to the skillet and cook until mushrooms are softened.
- Stir in heavy cream, chicken broth, Parmesan cheese, and cream cheese. Season with salt and pepper.
- Bring to a simmer, stirring until cream cheese is melted and sauce is smooth.
- Pour mixture into a baking dish.
- Bake for 20-25 minutes, or until bubbly and golden brown.
- Garnish with fresh parsley before serving.
Notes
- For a thicker sauce, simmer for a few more minutes before baking.
- You can substitute chicken breasts for chicken thighs.
- Add other vegetables, such as spinach or bell peppers.
