A flavorful and simple Jamaican dish combining chicken and cabbage.
Ingredients

- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon Jamaican curry powder
- 1 teaspoon allspice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, seeded and minced (optional)
- 1 head of cabbage, shredded
- 1/2 cup chicken broth
Instructions
- In a bowl, combine chicken, curry powder, allspice, salt, and pepper.
- Heat olive oil in a large skillet or pot over medium heat.
- Add chicken and cook until browned.
- Add onion, garlic, and scotch bonnet pepper (if using). Cook until onion is softened.
- Add shredded cabbage and chicken broth.
- Cover and simmer until cabbage is tender, about 15-20 minutes.
- Serve hot.
Notes
- Adjust the amount of scotch bonnet pepper to your spice preference.
- Serve with rice and peas for a complete meal.
