Description

A flavorful and simple Jamaican dish combining chicken and cabbage.


Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon Jamaican curry powder
  • 1 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, seeded and minced (optional)
  • 1 head of cabbage, shredded
  • 1/2 cup chicken broth

Instructions

  1. In a bowl, combine chicken, curry powder, allspice, salt, and pepper.
  2. Heat olive oil in a large skillet or pot over medium heat.
  3. Add chicken and cook until browned.
  4. Add onion, garlic, and scotch bonnet pepper (if using). Cook until onion is softened.
  5. Add shredded cabbage and chicken broth.
  6. Cover and simmer until cabbage is tender, about 15-20 minutes.
  7. Serve hot.

Notes

  • Adjust the amount of scotch bonnet pepper to your spice preference.
  • Serve with rice and peas for a complete meal.
