A hearty casserole with Italian sausage, peppers, and cheese.

- 1 pound Italian sausage, removed from casing
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 ounces mozzarella cheese, shredded
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, brown Italian sausage over medium heat. Drain excess grease.
- Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
- Stir in crushed tomatoes, oregano, garlic powder, salt, and pepper. Bring to a simmer.
- Pour mixture into a 9×13 inch baking dish.
- Top with mozzarella cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for 10 minutes before serving.
Notes
- For a spicier casserole, use hot Italian sausage.
- Add other vegetables such as mushrooms or zucchini.
- Serve over rice or pasta.
