Description
Crisp, sweet, and delicately flavored Italian pizzelle cookies, perfect for holidays or any occasion.
Ingredients
Scale
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon anise extract (optional)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your pizzelle maker according to the manufacturer’s instructions.
- In a medium bowl, whisk together the eggs and sugar until well combined.
- Stir in the melted butter and extracts until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Lightly grease the pizzelle maker if recommended by the manufacturer.
- Drop about 1 tablespoon of batter onto the center of each hot pizzelle iron.
- Close the lid and bake for 1-2 minutes, or until golden brown and cooked through. The exact time will vary depending on your pizzelle maker.
- Carefully remove the pizzelle from the iron using a spatula and let them cool on a wire rack. They will crisp up as they cool.
- Repeat with the remaining batter.
Notes
- For thinner, crispier pizzelles, bake for a slightly longer time.
- You can shape the pizzelles into cones or bowls while they are still warm and pliable if desired.
- Decorate with powdered sugar, chocolate drizzle, or sprinkles once cooled.
