Description
Chicken with a creamy whiskey sauce.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup Irish whiskey
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in chicken broth and Irish whiskey, scraping up any browned bits from the bottom of the skillet.
- Bring to a simmer and cook until the sauce has reduced slightly, about 5 minutes.
- Stir in heavy cream, Dijon mustard, and thyme. Season with salt and pepper to taste.
- Return chicken to the skillet and simmer for 5 minutes, or until heated through.
- Serve hot.
Notes
- Serve over mashed potatoes or rice.
- Garnish with fresh parsley.
