Description

Grilled chicken with a sweet and savory sauce, stacked with pineapple and rice.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp sesame oil
  • 1/2 tsp red pepper flakes
  • 1 pineapple, cored and sliced
  • Cooked rice, for serving

Instructions

  1. Marinate chicken in soy sauce, brown sugar, pineapple juice, garlic, ginger, sesame oil, and red pepper flakes for at least 30 minutes.
  2. Preheat grill to medium heat.
  3. Grill chicken for 6-8 minutes per side, or until cooked through.
  4. Grill pineapple slices for 2-3 minutes per side, or until grill marks appear.
  5. Stack rice, grilled chicken, and grilled pineapple.
  6. Serve immediately.

Notes

  • For a spicier flavor, add more red pepper flakes.
  • Serve with a side of steamed vegetables.
