Salmon fillets with a sweet and tangy honey pineapple glaze.
Ingredients

- 4 salmon fillets
- 1/2 cup pineapple juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a small saucepan, whisk together pineapple juice, honey, soy sauce, rice vinegar, garlic, and red pepper flakes.
- Bring to a simmer over medium heat and cook for 5-7 minutes, or until the glaze has slightly thickened.
- Season salmon fillets with salt and pepper.
- Place salmon fillets on a baking sheet lined with parchment paper.
- Brush the salmon fillets with the honey pineapple glaze.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Brush with glaze again before serving.
Notes
- Serve with rice and steamed vegetables.
- Garnish with fresh pineapple chunks and chopped green onions.
