Ingredients

- 1 lb boneless, skinless chicken breasts
- 2 tbsp honey
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 avocado, diced
- 1 cup cooked rice
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Marinate chicken in honey, lime juice, olive oil, salt, and pepper for 30 minutes.
- Grill or pan-fry chicken until cooked through. Dice the chicken.
- Mix cooked rice with diced avocado and cilantro.
- Stack rice mixture and diced chicken on a plate.
- Serve immediately.

- Adjust honey and lime to your taste.
- Add a pinch of red pepper flakes for heat.
