Description

A flavorful stack of honey lime chicken and creamy avocado rice.


Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 avocado, diced
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Marinate chicken in honey, lime juice, olive oil, salt, and pepper for 30 minutes.
  2. Grill or pan-fry chicken until cooked through. Dice the chicken.
  3. Mix cooked rice with diced avocado and cilantro.
  4. Stack rice mixture and diced chicken on a plate.
  5. Serve immediately.
