  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Optional: pinch of cayenne pepper for a spicy twist

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Stir well.
  3. Add the cold, cubed butter to the flour mixture and blend until it resembles coarse crumbs.
  4. Pour in the buttermilk and stir gently until just combined.
  5. Turn the dough out onto a floured surface and knead gently a few times.
  6. Pat the dough into a rectangle about 1-inch thick and cut out biscuits.
  7. Bake for 12-15 minutes until golden brown.
  8. In a large skillet, cook the breakfast sausage over medium heat until browned.
  9. Sprinkle flour over the cooked sausage and stir to combine, cooking for about 1 minute.
  10. Gradually whisk in the milk, stirring constantly until thickened.
  11. Add black pepper, salt, and cayenne pepper if desired.
  12. Let the gravy simmer for a few minutes.
  13. Serve the biscuits split in half with gravy ladled over them.

  • Use cold ingredients for flaky biscuits.
  • Be gentle when mixing the dough to avoid tough biscuits.
