Ingredients

- 1 cup quinoa, cooked
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 cup Kalamata olives, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked quinoa, chickpeas, cucumber, red bell pepper, Kalamata olives, red onion, parsley, and mint.
- In a small bowl, whisk together the lemon juice, olive oil, and minced garlic. Season with salt and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve immediately or chill for later.
Notes
- You can add feta cheese for extra flavor.
