Ingredients

  • 1 cup quinoa, cooked
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, chickpeas, cucumber, red bell pepper, Kalamata olives, red onion, parsley, and mint.
  2. In a small bowl, whisk together the lemon juice, olive oil, and minced garlic. Season with salt and pepper.
