Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels, fresh or frozen
- 1/2 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup BBQ sauce
- 1/4 cup ranch dressing
- 2 tbsp fresh cilantro, chopped
Instructions
- Preheat grill to medium-high heat.
- In a bowl, toss chicken with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Grill chicken for 6-8 minutes, or until cooked through.
- In a bowl, combine quinoa, black beans, corn, red onion, and cherry tomatoes.
- Top with grilled chicken.
- Drizzle with BBQ sauce and ranch dressing.
- Garnish with cilantro.
- Serve immediately.
