Description

A flavorful and protein-rich chicken bowl with BBQ and ranch flavors.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup BBQ sauce
  • 1/4 cup ranch dressing
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, toss chicken with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Grill chicken for 6-8 minutes, or until cooked through.
  4. In a bowl, combine quinoa, black beans, corn, red onion, and cherry tomatoes.
  5. Top with grilled chicken.
  6. Drizzle with BBQ sauce and ranch dressing.
  7. Garnish with cilantro.
  8. Serve immediately.
