Ingredients

- 2 medium zucchini, grated
- 1/2 cup all-purpose flour
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Grate the zucchini and squeeze out excess moisture.
- In a bowl, combine zucchini, flour, egg, Parmesan cheese, and garlic. Season with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the skillet and flatten slightly.
- Cook for 3-4 minutes per side, until golden brown and cooked through.
- Serve immediately.
