Ingredients

  • 1 cup cooked brown rice
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) can diced tomatoes and green chilies, undrained
  • 1 cup vegetable broth
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked rice, black beans, pinto beans, corn, red bell pepper, green bell pepper, onion, and garlic.
  3. Stir in diced tomatoes and green chilies, vegetable broth, and taco seasoning.
  4. Mix well to combine all ingredients.
  5. Pour mixture into a greased 9×13 inch baking dish.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let stand for a few minutes before serving.
