Description
A low-carb and flavorful egg roll in a bowl recipe.
Ingredients

- 1 pound ground pork or chicken
- 1 tablespoon sesame oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (16 ounce) bag coleslaw mix
- 1/4 cup soy sauce or coconut aminos
- 2 tablespoons rice vinegar
- 1 tablespoon ginger, minced
- 1 teaspoon red pepper flakes (optional)
- 2 green onions, sliced
Instructions
- In a large skillet or wok, brown the ground pork or chicken over medium-high heat. Drain any excess grease.
- Add sesame oil, onion, and garlic to the skillet. Cook until the onion is softened, about 3-5 minutes.
- Stir in the coleslaw mix, soy sauce (or coconut aminos), rice vinegar, ginger, and red pepper flakes (if using).
- Cook until the coleslaw is tender, about 5-7 minutes.
- Garnish with green onions. Serve hot.
Notes
- For added flavor, add a tablespoon of sriracha or other hot sauce.
- You can also add other vegetables, such as shredded carrots or bell peppers.
- Serve over rice or cauliflower rice for a complete meal.
