Ingredients

- 2 medium zucchinis, cut into fry shapes
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 1 tablespoon olive oil spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each zucchini fry into the beaten egg, then dredge it in the breadcrumb mixture, ensuring it’s fully coated.
- Arrange the coated zucchini fries in a single layer in the air fryer basket. Spray lightly with olive oil.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately.
Notes
- For extra crispiness, you can double-coat the zucchini fries.
- Serve with your favorite dipping sauce like marinara or a light ranch.
