Ingredients

  • 2 medium zucchinis, cut into fry shapes
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1 tablespoon olive oil spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Dip each zucchini fry into the beaten egg, then dredge it in the breadcrumb mixture, ensuring it’s fully coated.
  4. Arrange the coated zucchini fries in a single layer in the air fryer basket. Spray lightly with olive oil.
  5. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve immediately.
