Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, mix sugar and eggs until light. Add olive oil, milk, lemon juice, and lemon zest.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
