Grilled chicken with a sweet and savory Hawaiian glaze, stacked with pineapple and rice.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 tsp red pepper flakes
- 1 can (20 oz) pineapple slices, drained
- Cooked rice, for serving
- Sesame seeds, for garnish
Instructions
- Marinate chicken in soy sauce, brown sugar, rice vinegar, garlic, ginger, and red pepper flakes for at least 30 minutes.
- Preheat grill to medium heat.
- Grill chicken for 6-8 minutes per side, or until cooked through.
- Grill pineapple slices for 2-3 minutes per side, or until grill marks appear.
- Stack rice, grilled chicken, and grilled pineapple.
- Garnish with sesame seeds.
- Serve immediately.
Notes
- For extra flavor, marinate the chicken overnight.
- You can use chicken breasts instead of thighs. Adjust cooking time accordingly.
