Description

A hearty and healthy casserole with ground turkey, zucchini, and cheese.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown ground turkey over medium heat. Drain excess fat.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in zucchini, crushed tomatoes, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until zucchini is tender.
  5. Pour mixture into a 9×13 inch baking dish.
  6. Sprinkle with mozzarella and Parmesan cheese.
  7. Bake for 20 minutes, or until cheese is melted and bubbly.

Notes

  • You can add other vegetables, such as bell peppers or mushrooms.
  • For a spicier dish, add a pinch of red pepper flakes.
