Description

Quick and easy skillet meal with ground turkey and zucchini.


Ingredients

Scale
  • 1 pound ground turkey
  • 2 medium zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart with a spoon. Drain excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in zucchini, diced tomatoes, oregano, salt, and pepper.
  5. Bring to a simmer and cook until zucchini is tender, about 10-15 minutes.
  6. Serve hot.

  • Add a pinch of red pepper flakes for a little heat.
