Description
Grilled vegetable skewers with a bright lemon vinaigrette.
Ingredients

- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, cut into 1/2-inch slices
- 1 red onion, cut into wedges
- 8 ounces cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh oregano
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat grill to medium heat.
- Thread vegetables onto skewers.
- In a small bowl, whisk together olive oil, lemon juice, oregano, and garlic. Season with salt and pepper.
- Brush vegetables with lemon vinaigrette.
- Grill skewers for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred.
- Serve immediately.
Notes
- You can use any vegetables you like for these skewers.
- For extra flavor, marinate the vegetables in the lemon vinaigrette for at least 30 minutes before grilling.
