Ingredients

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1/2-inch slices
  • 1 red onion, cut into wedges
  • 8 ounces cherry tomatoes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh oregano
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium heat.
  2. Thread vegetables onto skewers.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, and garlic. Season with salt and pepper.
  4. Brush vegetables with lemon vinaigrette.
  5. Grill skewers for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred.
  6. Serve immediately.
