Grilled cheese and tomato soup is a classic comfort food combination that warms the heart and satisfies the soul.

  • 4 slices of whole grain bread
  • 2 tablespoons unsalted butter, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • Optional: fresh basil leaves for added flavor
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Optional: a splash of cream for richness

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté chopped onion until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Pour in crushed tomatoes and vegetable broth, then add dried basil, salt, and pepper. Bring to a gentle simmer.
  4. Let the soup cook for 15 to 20 minutes, stirring occasionally.
  5. While the soup simmers, butter one side of each slice of bread.
  6. Heat a skillet over medium heat and place two slices of bread, buttered side down, in the skillet.
  7. Layer sharp cheddar and mozzarella cheese on top, adding fresh basil if desired.
  8. Top with remaining slices of bread, buttered side up, and cook until golden brown, then flip and cook the other side.
  9. If desired, puree the soup for a smooth texture and stir in cream.
  10. Serve the grilled cheese alongside the tomato soup, cut into triangles if preferred.
